CREAM PUFFS WITH LEMON ZEST
2 CUPS WATER
1/2 CUP BUTTER
2 CUPS FLOUR
3 EGG WHITES
4 EGGS
1 1/2 TSP LEMON ZEST
PREHEAT OVEN TO 350.
IN A MED. SAUCEPAN COMBINE THE WATER AND BUTTER. BRING TO A BOIL; ADD FLOUR AND LEMON ZEST ALL AT ONCE, STIRRING VIGOROUSLY WITH A WOODEN SPOON. COOK AN STIR UNTIL MIXTURE FORMS A BALL THAT DOES NOT SEPARATE. REMOVE FROM HEAT. COOL FOR 10 MINUTES. ADD EGG WHITES AND WHOLE EGGS, ONE AT A TIME, BEATING WITH A WOODEN SPOON AFTER EACH ADDITION (TEXTURE SHOULD BE LIKE MASHED POTATOES). DROP BATTER WITH A 50MM ICE CREAM SCOOP ABOUT 3 INCHES APART ONTO LIGHTLY GREASED OR PARCHMENT LINED BAKING SHEET.
BAKE 35 MINUTES OR UNTIL GOLDEN AND FIRM. REMOVE FROM BAKING SHEET; COOL ON A WIRE RACK. JUST BEFORE SERVING, SPLIT THE CREAM PUFFS AND REMOVE ANY SOFT DOUGH FROM INSIDE.

FOR A DESSERT-FILL WITH PREPARED CUSTARD, PIE FILLING OR SPRINKLE WITH POWDERED SUGAR OR A FUDGE SAUCE.
FOR A LUNCHEON-FILL WITH SAVORY SEAFOOD OR CHICKEN SALAD.
